Last night's dinner

Decided to have western for dinner last night!


Roasted some root veggies with olive oil, garlic and thyme!

I bought too much salami from the supermarket, so we ended up having crispy salami pasta salad. Not to forget, honey mustard baked chicken!

Crispy Salami Pasta Salad
Penne Pasta (250g)
Salami (50g)
Olive Oil (1tbsp)
Tomatoes (1)
English Parsley (a handfull)

1. Slice salami into thin strips
2. Dice tomatoes
3. Roughly chop english parsley
4. Boil pasta according to directions on packet, drain, rinse under running water
5. Heat oil in frying pan, add salami and fry till crispy
6. Add in tomatoes and fry for another 1-2 minutes
7. Combine salami and tomatoes mixture, english parsley and cooked pasta. Mix well
8. Chill in fridge

*I cooked too much food and we couldn't finish the salad so I had it today. It was a little dry compared to last night, so I added honey mustard and it was delish!:)


Honey Mustard Baked Chicken 
Chicken Breast Fillets (1kg)
Honey Mustard (2tbsps)
Sour Cream (1/2 cup)
Cheese (1/2 cup)

1. Combine honey mustard and sour cream together
2. Pour over chicken breast fillets
3. Sprinkle with cheese on top
4. Bake at 185 degree celsius for 30 minutes
5. Serve warm
